It depends on how big you're making the body. If it's a smaller body (like "Elmo" sized) I'd go with 1/2 inch stuff. If it's bigger ("Ernie" or "Count" sized) I'd stick with the thicker stuff.
Also consider the fabric you're covering it with, so it doesn't pull the foam down. Thick fabrics or using a fabric with a stretch in the wrong direction can do this to thinner foam.
The green foam is a lot denser, but I get white stuff if I intend to dye it sometime.
